There is or was a small time/small town chain of burger stands in NM that put whole roasted and peeled green chiles on their burgers. Very good! I forget the name of the chain, Grandy's, perhaps?
I tried chicken fried steak at several restaurants while in southern NM back in the '90s. Instead of gravy, they put chile con queso on top. Also quite good, actually.
I was observing with a telescope one night, out in the desert between Las Cruces and Deming. It was quite dark, though the skyglow from El Paso and Juarez was evident to the SE. Some huge black shape came out of the desert to the south toward me, moving slowly. Scared the crap outta me! I moved so my van was between myself and the big black blob, watching it closely. Turned out it was a big black bull, accompanied by a few cows. It sniffed at the telescope a bit, then meandered off... :S
After looking at the link, I certainly can understand why driving through Mora and Espanola is not the best idea. Unless maybe you are in an Army tank. Maybe.

Come down to Bingo Burger in downtown Pueblo: they put green chiles in their burgers as a matter of course.
